Chicken & Spinach Meatballs


Here is the recipe for the Chicken & Spinach meatballs for the photo I posted on Instagram!!! These are do delicious and everyone in my family devours them.  They also freeze and reheat very well.

This batch made 60 meatballs! Eat meatball was 27cal with 0F 2C 4P!!!!

Ingredients:
3lbs ground chicken breast
160grams sweet onions
85grams baby spinach
138grams egg whites
50grams minced garlic
135grams oat flour
seasonings to taste (I used black pepper and oregano)

Preheat oven to 425 degrees and line two sheet pans with parchment paper or non stick spray.

In a food processor or blender combine the spinach and onion until its a fine puree. In a separate large bowl add the chicken, egg whites, and your veggie puree. Add your seasonings of choice. Next add in your oat flour. Once everything is combined it may still look a little squishy, but have no fear! A short 15 min rest and the oat flour will firm it right up! Now the rest is up to you. I have used this recipe in a loaf pan and a meat loaf, but most of the time I scoop them into balls and bake on a cookie sheet. I use a cookie scoop to get a pretty uniform sized meatball. Bake for 20 mins or until the tops start to brown and crisp. Once these are in the oven I bake for 10 min, then rotate my sheets and bake for another 10min. Enjoy!
